I am a mama of three girls. I have been married to my best friend Adam for 16 years.
My days are full of allergies, autism, running our small urban farm, homeschool our two youngest and everything in between.
My family loves this meal! It’s quick, easy and cheap. What is there more to love about it. This is for my family of 5. It’s great as leftovers. If you have a larger family just double or triple the recipe. We eat this for dinner. However you could use breakfast sausages and have it in the morning.
You will need:
1 lb of ground meat(I used beef)
1 lb of uncooked pasta
2-3 eggs per person.
1 medium onion (this is optional)
Cook pasta sty according to the box.
In a large skillet cook the onion and ground meat.
Once pasta and meat is fully cooked. Add pasta and eggs to the meat.
Prepare eggs as if you were to make scrambled eggs.
Cook on medium tell the eggs a fully cooked.
I don’t eat eggs. So mine is in the bowl with cheese and ranch.
Adam, Adisynne and Kennidi don’t eat cheese so there plate is on the left. Joey’s has the cheese on the right.
My girls get tired of just rice crispy treats. So a few years ago I found (or made up) a recipe using Cheerios. I have made any different versions with all types of cereal. These are peanut butter cereal bars.
1/4 cup margarine/butter
1/2 cup peanut butter
10 oz of marshmallow
6 cups of cereal (I used Honey Nut Cheerios)
1/2 cup chocolate chips(I used dairy free mini chips)
In a large microwave safe bowl melt butter. Do this in 30 second intervals until melted. Stirr in peanut butter.
Add the marshmallows stir until coated with the butter and peanut butter mixture.
Next melt the marshmallows . Do this in 30 second at one time as well. Be careful the bowl does get hot.
Once everything in smooth add the cereal. You want to go fast or as the marshmallows cool they are harder to work with.
Add the chocolate chip. They will melt slightly giving a nice chocolate swirl.
In a 9×13 inch pan. Spray the sides and bottom with a non cooking spray. Press the cereal mixture into the pan. Sprinkle the top with more chocolate chips. Let it cool then cut into squares. I didn’t have a 9×13 pan so I used a bigger one but push it all to one side using only half the pan. Use what you got!
